edit: is it a delayed console/steam release and only egs in 2024? last splash screen only indicated egs and no other platforms is all.

the newer videos ( including this one ) are way less impressive. there is a big downgrade happening and on top of that, there is stuttering that wasn't available in the first video they released.
now granted the game is probably 15 months away so things will improve ( hopefully ). but it's hard to trust these guys and even get excited anymore.
I think ue5 is the engine.How to sensibly adjust expectations imho:
Find out what engine it's using. Understand what level of performance that engine provides and on what hardware config. Understand there's going to be no "secret sauce" that makes it magically way more performant than its peers. Because that's what it's going to look and run like.
Understand that if a game looks particularly good its likely a result of the quality of the assets and overall art-direction. This is useful early on because it generally is going to remain consistent through to the final product. Animation quality is a particularly accurate indicator of how much time has been spent on the overall presentation; you'll rarely see a game with great animation but poor quality visuals generally.
From a gameplay standpoint its hard to predict because often how a thing feels can switch from zero to hero (or vice versa) based on late in development tweaks. Best guess is track-record to be honest, if an outfit has a history of producing games that play well then its less likely that their next, similar, project will also play well. With first-timers you realistically have to take a wait-and-see because noone teaches all the nuances and subtleties that make things great; its about best-guess and experience.

Actually, I love the bestiary and art direction of the game. Zoanthrope monsters is something many hack and slash games surprisingly do not seem interested in, so having a visually impressive game with gator-men, tiger-men, dragons, demons and the like is a treat for me.When it releases it will already be outdated visually, which is the only thing it's going for.
