With under 3 million Switches sold, the answer is clear, this will be the worst selling Mario Kart ever.

Well, shit...it turning into LAN Mode when 2-Player selected crushed my: 2 people on Docked Switch, 1 on Handheld Switch dream...
After all the Nintendo Switches are started and have fired up the game, here is how you begin LAN mode:
- Navigate to the game's main screen.
- Hold down your L and R buttons and press the left analog stick on the player-one controller.
- You will see the ”Wireless Play" change to ”LAN Play."
- Confirm your controllers and Mii profiles.
- Whoever is the host will choose ”Create Room." Others will select the room in the lobby.
- Select your characters, karts, event, and track.
- Have fun!

LAN is actually activated via a button command... L & R plus clicking in the left stick I believe.
You should still be able to use your 3-player method just fine via wireless.

I use an internal capture card called Avermedia H727, I've been meaning to upgrade it to a 4K capable card but I suppose there's no need if I'm primarily providing Switch content.

It reminded really isn't surprising that Deluxe has a much better metascore. Heck I think Deluxe is about as perfect as video games get, pure simple fun.

I think you are taking this too seriously.
You are attributing a grand logic to these scores when it's just individual people liking a game and its content and portability.
16 additional tracks + Battle Mode seems like enough to boost its score by six points.
